Johannes Dam & Son 27-Layer Danish Rye Crackers are a new product on the shelf at Russ & Daughters, and they have quickly become one of our favorites. These artisanal crackers are an excellent complement to our smoked fish and spreads — beyond bagels and bialys. They’re perfect for appetizers and hors d’oeuvres.
Since 1855, the Dam family has been baking these superb crackers on the tiny Danish island of Bornholm, which sits in the middle of the Baltic Sea. Today, Master Baker Jesper Dam is the fifth generation to work at the bakery using a well-guarded recipe passed down through the generations. Each cracker is made of 27 individual layers that create an unusual crispness and unique flavor that melds both sweet and savory with a hint of caraway. Since much of the production is performed by hand, two identical crackers are hard to find.
Our Double Smoked Danish Salmon also hails from Bornholm, so perhaps it is no surprise that these rye crackers pair so well with our smoked fish and herrings, not to mention our homemade chopped liver. But, we are not afraid to say that these crackers are so good that just eating them on their own is a delight. The crackers are available in the store and online.
